Paav Bhaji


Ingredients:
 
For the Bhaji :
3 Big Potatoes Boiled and Mashed
1 Big Carrot Chopped
1 Big Capsicum/Green Bell Peper Finely Chopped
1/2 cup Fresh/Frozen Peas
2 Cups Cauliflower florets
1 Cup Tomato Puree
1 Tbsp Ginger-Garlic Paste
1/4 Tsp Turmeric Powder
1 Tsp Red Chilli Powder
1 Tbsp Paav Bhaaji Masala
Salt to Taste 
A pinch of Asafoetida/Hing
1 Tsp Kasoori Methi/Dried Fenugreek leaves
2 Cups Water
1 Tbsp Butter
3 Tbsp Oil
 
For the Paav :
Paav
Butter
Paav Bhaji Masala

For Serving :
Butter
Lemon Wedges
Fresh Corriander Leaves Chopped
Onion finely Chopped

Method:
1. Boil Cauliflower, Carrot and Green Peas in enough water and a little salt.Cook till tender. Drain and preserve the water.
2. In a pan heat oil add chopped Capsicum cook till soft then add Ginger Garlic paste and saute for a few minutes.
3. Stir in Turmeric powder, Red chilli powder, Tomatoe puree.Cook till oil starts separating.
4. Now add boiled Veggies, Potatoes, Paav bhaji masala, Kasoori methi, Butter, Hing.
5. Adjust the consistency by adding the preserved water(you might need more or less) and keep mashing.





6. Cover and simmer for 10-15 mins. 
7. Warm the Paav on a heated non stick pan/Tawa apply butter and sprinkle some paav bhaji masala on both sides.
8. Serve Hot with Lemon, Butter and Chopped Onions mixed with corriander leaves!!
