Chicken/Mutton Sukka (Gravy)


Ingredients :

Whole Garam Masala (Dry)
3-4 Cloves (Lavang)
1-2 Bay Leaves
1-2 sticks of Cinnamon(Dalchini)
1 Green Cardamom
2 tsp Poppy seeds (soaked in water for few hours)
2 tsp Sesame seeds (soaked in water for few hours)
2 tsp Dry or Fresh Coconut
1 tsp whole coriander seeds or powder
1/2 tsp Jeera
Roast the whole garam masala on a dry pan/tawa for 1-2 min on a low flame.

1/2 kg Chicken or Mutton(washed and cleaned)
2 Big Onions Sliced
1 Big Tomato
3-4 Big Garlic pods
2 tbsp Oil

Seasoning :-

1-2 tsp Red chili powder(according to spice level)
pinch of Turmeric
Salt according to taste

1) Fry the Onions in oil till dark brown in color. Drain oil and keep aside.
2) Put all the dry ingredients , fried onions and chopped tomatoes in a mixer and grind to a smooth paste.
3) Heat oil in a heavy bottom pan, now lower the flame and add Red Chili Powder(this gives a nice color to the gravy), whisk a little and immediately add the masala paste add turmeric powder and salt. Let this masala cook on medium flame till the oil starts separating stir occasionally.
3) There are 2 ways you can add Chicken/Mutton to this, First you can cook Chicken/ Mutton in a pressure cooker with salt and turmeric powder OR add the Chicken/Mutton in this masala and give whistles(till tender) along with this masala.

Garnish with coriander leaves and lemon juice. Serve Hot.
